Chicken Breast, Corn, Cucumber, and Egg Salad
From the most ordinary ingredients — striking and pretty! This salad of chicken breast, corn, cucumber, and eggs is very simple and quick, with a creative presentation. The ingredients aren't tossed together but arranged separately on the plate. It's a real crowd-pleaser on the holiday table!

Step 1:
How do you make a salad of chicken breast, corn, cucumber, and eggs? Gather the ingredients. Boil and cool the breast and eggs ahead of time. Wash the cucumber and drain the liquid from the can of corn. You can make your own mayonnaise, or use a 1:1 mix of mayonnaise and sour cream.

Step 2:
Boil the chicken breast ahead of time. How? Bring water to a boil in a pot and lower in the meat. Add salt. Cook the chicken for 30 minutes at a gentle simmer over low heat. Then cool the fillet and cut it into small cubes.

Step 3:
Cut the cucumber into the same medium cubes. Always taste the cucumber before cutting to make sure it isn't bitter — a bitter one will ruin the whole dish. If the skin is rough and tough, peel it off.

Step 4:
Boil the eggs. How do you hard-boil eggs? To keep them from cracking, put them in cold water and bring them up over low heat. Boil for 9 minutes from when the water starts boiling, then plunge them into cold water to cool. The sudden temperature change makes them peel more easily. Peel the eggs and cut them into cubes too.

Step 5:
Take a large flat plate. Set a small dish of mayonnaise (or the mayo-and-sour-cream mix) in the center. Arrange all the ingredients in segments, dividing the plate into 4 sections. Serve the salad, and toss it together right at the table. Enjoy!
- You can also build this salad in layers using a ring mold. The layer order is: chicken – cucumber – corn – eggs, brushing each layer with mayonnaise.
- You can add salt to the salad even with the mayonnaise — it seemed to me it needed it. Go by your own taste.
- The salad looks neat and pretty if you cut all the ingredients into pieces of the same size and shape (cubes, for instance).

- How do you choose good canned corn? Always check the expiration date on the can. If it's a glass jar, look closely at the kernels: they should be uniform in size and color, whole, and unblemished. The ingredients shouldn't include dyes, preservatives, or flavor enhancers.
