Step 1:
Peel the lemon (preferably only the zest (less white pulp), otherwise the drink will be bitter). Put the zest aside (do not throw it away: it will be needed).
Step 2:
Put a pot of water and sugar on the fire.Bring to a boil.
Step 3:
While the water is boiling, take the peeled lemon and squeeze the juice (I cut the lemon in half, insert a fork into the pulp and press it gradually turning around the fork).
Step 4:
When the water starts to boil, add the zest (you can also add mint for flavor). Let boil for 1-2 minutes and remove from heat. Leave to brew (I usually do it in the evening and leave it overnight).
Step 5:
When it cools down, strain, add lemon juice and put it in the refrigerator.
