Homemade Noodles with Chicken and Vegetables
A delicious, hearty, and nourishing homemade dish! When time and the mood allow, you can treat your family to a truly homemade, wholesome, and tasty dish. This is a very simple dish, easily made from everyday ingredients that any thoughtful cook always has on hand. The only thing is that it takes a bit more time than using store-bought egg noodles.

Step 1:
Gather the ingredients for the dish from the list. For homemade noodles you need simple things: flour, water, vegetable oil, eggs, and salt.

Pour the sifted wheat flour into a deep bowl. Make a small well in the center.

Add the table salt, crack in the egg, and pour in the vegetable oil and clean cold water. Mix the ingredients together. You'll get a smooth, pliable dough.

Add more flour as you knead if you need it. Since flour density varies by brand, you may need more or less to reach the right consistency. To make the dough more elastic and easier to work with, it's best to chill it briefly in the fridge, wrapped in plastic wrap.

You can use a whole chicken for this dish, cut into small pieces if you're cooking for a large family, or use the fillet or another part of the chicken. Rinse the meat and cut it into small pieces or cubes. Rinse the meat once more.

Put together the vegetables — you can change the mix, adding more or fewer, as you like. Wash, peel, and dice the carrots.

Peel the onion and cut it into cubes.

Step 8:
Wash, peel, and dice the potatoes. You can leave the potatoes out if you like — the dish is very filling and nourishing even without them. With potatoes it's even more filling and tasty. To make the dish lighter, you can replace the potatoes with zucchini.

Step 9:
Wash the bell pepper and cut out the seed core with the seeds. Cut the pepper flesh into cubes or strips. Wash the tomatoes, cut out the stem end, and cut the flesh into cubes or pieces. You can replace the tomatoes with tomato paste if you like. Peel the garlic and finely chop it with a knife or press it through a garlic press.

Pour the vegetable oil into a skillet and heat it. Add the onion and fry it until translucent.

Add the prepared chicken to the skillet with the onion.

Fry it over medium heat until it turns white.

Then add the vegetables to the skillet. First the carrots — stir and fry for about 10 minutes. Then add the potatoes and stir. Season with salt and ground black pepper to taste. Pour in a little water. Simmer covered for about 15 minutes. Then add the rest of the vegetables. Stir and simmer everything together, covered, for another 15 minutes.

Step 14:
Meanwhile, make and boil the homemade noodles. On a floured surface, roll the dough out into a thin sheet and cut it into strips, long or short.

Boil them in salted water until done.

Lift the noodles out of the water with a slotted spoon and add them to the skillet with the meat and vegetables. Stir and simmer for about another 7 minutes. Sprinkle with chopped fresh herbs. Turn off the heat and leave it covered for 10 minutes.

Serve the dish sprinkled with fresh herbs. Enjoy!
