Italian Zabaglione (Sabayon) Cream
Wonderfully tender, fragrant, and very tasty! Zabaglione (sabayon) is the famous whipped egg custard, a traditional Italian dessert made with sweet wine. It's served in individual portions with sponge cookies, fruit, or berries. The perfect way to end a romantic dinner!

Step 1:
How do you make zabaglione? Gather the ingredients. For zabaglione cream you'll need egg yolks, regular and vanilla sugar, and wine.

In a heatproof bowl, lightly beat the egg yolks.

Next, add the granulated sugar and vanilla sugar to the yolks.

Whisk thoroughly for 1 minute. There's no need to whip the mixture until fluffy.

Pour in the wine and mix everything well again.

You'll cook the cream over a water bath. Take a pot slightly wider than your bowl of cream, pour a little water into it, and bring it to a boil. Set the bowl of cream on top of the pot. Note: the bottom of the bowl must not touch the boiling water! By the way, if you use a glass bowl to cook the cream, be careful not to run the heat too high, or the bowl may crack from the high temperature!

Step 7:
Heat the cream over the water bath for 7–10 minutes, whisking it thoroughly with a whisk or mixer the whole time. As it cooks, the cream should turn into a fluffy, thick foam.

Pour the cream into glasses or dessert cups and leave it until completely cooled.

Serve the zabaglione with your favorite berries. Enjoy!
- Zabaglione is made with wine as its base. Traditionally the wine is Marsala — a Sicilian dessert wine — but you can use any other wine you like best. The finished zabaglione has a rich wine aroma and flavor, so if you're not fond of alcohol, this dessert probably won't be to your taste.
- How do you tell if an egg is fresh? Crack it into a separate container. First of all, there should be no off smell. The white of a fresh egg is clear and clean. The yolk shouldn't spread and will be glossy, domed, and uniform.
- Always wash eggs before using them, since even a shell that looks clean can carry harmful bacteria. It's best to use a food-safe wash and a brush.
