Lavash Roll with Processed Cheese and Egg

A quick, simple, delicious appetizer! There are countless appetizer recipes made with thin Armenian lavash (flatbread). They're shaped into rolls, parcels, or pinwheels. One of the simplest and quickest is a lavash roll with processed cheese and hard-boiled eggs. This clever appetizer earns its place on a holiday table and on the everyday menu as a snack between meals.

    Gather the ingredients for the appetizer. It's simple and uncomplicated, the ingredients are budget-friendly and always on hand in the fridge. If you like, you can add a meat product such as chicken or sausage. Wash the eggs with soap. Put them in a pot, cover with cold water, and set over the heat. Cook for 10 minutes from the time the water comes to a boil.

    Don't cook the eggs any longer, or the yolk takes on an unappetizing bluish tint. Cook them less, and the yolk may not be fully set, which is unsafe. Drain the water. Cover the boiled eggs with cold water, let them cool, peel them, and finely chop them with a knife or run them through an egg slicer.

    Put the processed cheese in the freezer for 20–30 minutes so it firms up a bit, making it easier to grate. You can also pulse it into crumbs in a blender or other chopper.

    Put the eggs and cheese in a bowl and add a pinch of salt and ground black pepper.

    For moisture, flavor, and a special aroma, we'll add green onion and fresh herbs. Wash the green onion, pat it dry on paper towels, and finely chop it with a knife. Wash, dry, and finely chop the fresh herbs as well. Add the herbs and onion to the bowl.

    Dress with sour cream, with a mix of sour cream and mayonnaise, or with just mayonnaise, as you prefer. If you use only mayonnaise, you can skip the salt, since mayonnaise is salty enough.

    Unfold the lavash; if it isn't rectangular, it's best to cut out a neat rectangular sheet.

    Spread the filling over the whole surface of the lavash in a thin layer.

    Roll the filled lavash up into a roll and refrigerate it for an hour to let the flavors meld. Serve the lavash appetizer with cheese and egg. Enjoy!
