Homemade minced meat for dumplings is a natural preparation, suitable even for a children's menu. The first thing that starts the cooking process is buying meat. It is better if it is a combination of lean beef and sufficiently fatty pork.
The meat is well washed, cut off the films and parts of the connective tissue from it, cut into small pieces. Scroll through the prepared meat in a meat grinder with a fine grate. If you plan to give dumplings to small children or just want to get a more tender filling in consistency, scroll the minced meat on the meat grinder again. It won't take too long, but the result will pleasantly surprise you.
Peel the onion and garlic, rinse and dry with a towel. Grate the prepared vegetables on a fine grater and mix with the twisted meat to the most homogeneous consistency. You can scroll onions and garlic in a meat grinder, the method of chopping vegetables depends on individual preferences. After grating, they can be felt in the finished dumplings in small pieces, after grinding in a meat grinder they will be noticeable only by taste. Add salt, ground black pepper and other favorite spices, if there are any, mix the mass again. Put the minced meat in the refrigerator for 15-20 minutes before the final stage.
The minced meat has cooled down a little after all the grinding and repeated mixing, and is ready to add the secret ingredient. It is not too pleasant to eat dry dumplings inside, it is much better when an appetizing broth is formed inside when cooking. Ordinary crushed ice will help to achieve this effect. Unexpectedly, but this is the secret of the real, most delicious Siberian dumplings. Add finely chopped ice to the bowl with minced meat, stir the mass quickly, cover with a film and send it to the refrigerator. At this stage, it is important not to get distracted and forget the blank on the table, otherwise the ice will melt and the effect will not be the same.
After 30 minutes, the minced meat for dumplings is completely ready to work. Gather the whole family and cook real homemade dumplings.
How to properly prepare ice? To make it transparent, use cold boiled or non-carbonated purified water. Do not take tap water, it will give the drink an unpleasant taste. Boil the water for about 2 minutes. Cool it down. Repeat boiling. Cool to room temperature. Pour into ice molds. Place in the freezer until completely solidified.
For this recipe, it is better to take not frozen, but fresh meat, otherwise the finished meat risks getting dry.
