Eggless Manti Dough

A simple, easy dough for manti — the Central Asian steamed dumplings. With a small tweak to the classic recipe, you can make this dough with just three ingredients.   • Pour room-temperature water into a deep bowl and add salt to taste. Stir until the salt dissolves. Sift the flour through a fine sieve once or twice, then add it to the water a little at a time. Once a shaggy ball starts to come together, turn it out onto a floured surface. Keep kneading for at least 10–15 minutes, dusting in more flour as needed. The dough should be stiff and smooth. Cover the bowl with plastic wrap and let the dough rest for about half an hour. After that, it's ready to roll out.
