Tar well, clean the legs, rinse.
Cut into 2 pieces and leave in running water for two days. During this time, all the blood will come out of the legs, the legs will become white.
Now boil the legs until tender, it's about 2 hours.
Prepare the brine. Remove the finished legs from boiling water and dip them in brine for 2 minutes. Then rinse in warm water.
Prepare the marinade. Transfer the legs to the marinade, close the lid, hold for 12 hours, then put them in the refrigerator for 2 days.
Everything is ready, you can eat.
