Step 1:
The easiest way to prepare cranberries for the winter while preserving all the vitamins contained in fresh berries is to rub it with sugar without cooking to preserve all the healthfulness of this berry. Only cranberries and sugar are needed. A lot of time and effort will not be required for cooking. We carefully sort the cranberries, remove the rotten berries to avoid fermentation and spoilage of the finished product.
Step 2:
Wash the berries under running water, throwing them into a colander, let the water drain well. The easiest way to punch cranberries with a blender is the fastest way. But some housewives grind cranberries through a sieve so that the mass is homogeneous and jelly-like, without skin and seeds. However, they also contain useful substances, so it is better not to separate the cake from the pulp. You can use a meat grinder or a food processor, other kitchen appliances.
Step 3:
However, it is believed that the acids of cranberry juice can react with the metal parts of these devices. Therefore, it is better to grind the berries with a wooden push or a spoon. If some berries remain intact in the ground cranberries, there is nothing to worry about.
Step 4:
In the classic recipe of cranberries mashed with sugar for the winter, sugar and berries are added in equal parts. This amount of sugar allows you to store the finished product at room temperature. If someone, according to taste or health condition, such an amount of sugar seems excessive, it can be reduced, but then the cranberries will not be stored for so long, and it will need to be stored in a cold place, in the refrigerator or even better in the freezer.
Step 5:
Add sugar to the mashed cranberries and stir. Cover the bowl with the contents with a cotton towel and leave overnight at room temperature.
Step 6:
In the morning, the workpiece is laid out in sterilized jars. Banks need to be prepared in advance, they must be clean, sterilized and dry. We also boil the lids. We roll up the lids and put them away for storage in a cool place. Bon appetit!
