Step 1:
Prepare the products. As always, we take high-quality vodka. Cherries can be both fresh and frozen, there is no need to defrost.
Step 2:
Sort out the cherry, remove all the spoiled, pecked. Only a perfectly high-quality one should remain. Rinse well under cool running water, just rinse the frozen one. Let the water drain.
Step 3:
Then put it in a cooking container, sprinkle with sugar and add enough water so that the sugar becomes moist. Depending on how much the cherry will release juice, you can add less water or not add at all. Siberian varieties are special, my cherries were left completely dry and I needed to add water. Put a couple of slices of dry zest without a white layer, you can also fresh, but not grated.
Step 4:
Put the saucepan on low heat and, stirring constantly, wait for the sugar to completely dissolve, let it boil and cook for 2-3 minutes, remove the foam and allow to cool completely. The syrup with cherries should be quite saturated, if it turns out to be a little thin, it's also okay.
Step 5:
Pour the cooled cherry syrup with a stone into a jar, add vodka. Shake well so that everything is mixed and tighten the lid tightly, perhaps even through cellophane. Remove to a dark place at room temperature for three days.
Step 6:
Strain the infused drink from the cherries through a sieve / gauze. Pour into a bottle and put in the refrigerator for another three days until finally ready. That's all, you can take a sample from the tincture!
Usually, cherry tincture is prepared from three weeks to three months, this option can be said to be an express method. Well, you wanted cherries, in a week once - and you're done!
Tincture on berries with cherry pits may differ in special astringency. To eliminate this, you need to add orange peel to the drink.
It will soften the taste and give a light aroma. With the zest carefully, too much will give bitterness. If you like tartness, you don't need to add the zest.
Express tincture does not differ much in taste from long-infused, but the taste may be different from the variety of the cherry itself, until you try it, you will not know ..
