Step 1:
How to make dumplings with blueberries on kefir? Prepare the products. The fat content of kefir does not matter. Flour may need a different amount, look at the dough and its consistency. Berries are suitable both fresh and frozen. If you use frozen ones, do not defrost them beforehand. Sort the berries, wash and dry them, pouring them on a paper towel. Adjust the amount of sugar in the filling to your liking.
Step 2:
Preheat the kefir to a warm state, I did it in a saucepan on the stove, on the smallest fire. Just be careful — overheated kefir can curdle. Pour sugar, salt and soda into it, mix. Since kefir is warm, the products will dissolve in it much faster.
Step 3:
The reaction between the acid contained in kefir and the alkali, which is soda, will immediately begin. Thanks to this, carbon dioxide will be released, you will see it immediately — the mass will begin to bubble. As a result, the dough will be fuller and softer. Leave the kefir to stand for 5 minutes, then pour it into a dough bowl. Beat in the egg, mix with a whisk.
Step 4:
Start adding flour to the kefir mass in portions, be sure to sift it. This will not only remove garbage, but also enrich the flour with air, which will improve the dough. After each portion of flour, stir the dough, first with a whisk, then with your hands.
Step 5:
When the dough becomes thick, put it on the table and knead it already on it. Whether to add more flour, decide by the consistency of the dough — if it sticks too much, put more, if it can already be safely kneaded, then stop.
Step 6:
As a result, the dough should become smooth and homogeneous. Assemble it into a ball, cover it with a towel and leave it to lie down for 30 minutes. During this time, the flour will finally absorb all the liquid, gluten will develop in it, which is responsible for elasticity — it is much easier to work with such a dough, so I advise you to always give it a rest after kneading.
Step 7:
Then divide the dough into three parts to make it easier to roll it out. On a table dusted with flour, roll out the dough into a layer, but not very thin, leave it slightly plump, 4-5 mm, so that the dough does not break when cooking.
Step 8:
Cut the dough into circles with a glass or a special notch. Do not make the blanks small so that they can hold more berries.
Step 9:
Put a teaspoon of blueberries on a circle of dough, pour a teaspoon of sugar on top. With so many dumplings, they don't turn out too sweet, I also sprinkled sugar on top of them when eating.
Step 10:
Connect and pinch the edges of the workpiece, forming a "pie".
Step 11:
If desired, twist the seam of the dumpling figuratively — this will not only decorate them, but also additionally protect them from juice leakage.
Step 12:
How to cook dumplings? Bring the water to a boil in a large saucepan — the dumplings should float freely during cooking so as not to stick together. For the same reason, I advise you to cook them in batches. Add a little salt to the water. Throw in the dumplings. Stir with a spoon so that the dumplings do not stick to the bottom. Wait for re-boiling, make the fire moderate. After the dumplings pop up, cook them for 3 to 5 minutes, depending on the size.
Step 13:
Take out the finished dumplings with a slotted spoon on a plate and serve immediately on the table. It will be very tasty to serve them ice cream or any sweet cream to taste. Bon appetit!
