Pasta with Zucchini in Cream Sauce

Step 1:
To make pasta with zucchini in cream sauce, gather the ingredients on the list. The pasta can be any shape, long or short — the main thing is that it's good quality, made from durum wheat. Alongside the pasta you'll make a zucchini-based sauce with garlic, oil, cream or sour cream, thyme, and salt.

Cook the pasta until al dente. Save the cooking water — you'll need it to thin the sauce — or time it so the pasta is done just as the sauce is ready.

Lightly fry the very thinly sliced zucchini in oil for 5 minutes.

Add the crushed and finely chopped garlic clove and the leaves of dried or fresh thyme, and season with salt. Stir and keep frying for about 3 minutes.

Grate the hard cheese on the coarse side of a grater — ideally Parmesan.

Add the sour cream to the zucchini fried with garlic and thyme, thin it with some of the pasta cooking water, and bring to a boil.
