  • Hard cheese is easy to make at home. Start with 700 g (about 1.5 lbs) of farmer cheese. Put it in a good-sized pot, pour in the milk (1.5 liters / about 6 cups), and stir until smooth. Set the pot over the heat and warm it, stirring, until the mixture separates into large curds and whey. Strain it through cheesecloth — you should have a thick curd. Squeeze it well to drain off all the whey. Return the pressed curd to the pot, add 70 g (about 5 tablespoons) of butter and the egg, and mix thoroughly. Set over low heat and stir until the butter melts. Add salt and your favorite spices and stir. Now add 1 teaspoon of baking soda. Keep cooking over the heat, stirring constantly. The mixture should turn elastic, dense, and smooth. When it stops sticking to the spoon, take the pot off the heat. Press the finished cheese firmly into a mold, cover, and chill in a cold place until set. Your homemade cheese is ready. Enjoy!
