Cooking method
Hard cheese is easy to cook at home. First you need to take 700 g of cottage cheese. Put it in a saucepan of a suitable size, pour milk (1.5 liters) and mix until smooth.
Put the pan on the stove and heat, stirring, until the contents are divided into large cottage cheese flakes and whey. Then strain the contents of the pan through cheesecloth. You should get a thick curd. Squeeze it well so that all the serum runs off.
Put the pressed cottage cheese, 70 g of butter and egg in a saucepan, mix thoroughly. Put on a slow fire and keep on it until the butter melts. Add salt and your favorite spices, stir.
Now add 1 tsp of baking soda. Continue to keep on fire, stirring constantly. The mass should become elastic, dense, homogeneous. When it stops sticking to the spoon, remove the pan from the stove.
Put the finished cheese into a mold, tamp it well, cover it with a lid and send it to a cold place to cool down. Homemade cheese is ready. Enjoy your meal!
