Apple Ice Cream
A refreshing treat — make a batch and dig in! This apple ice cream is a delicious fruit dessert, especially welcome in summer when you're craving something cold and refreshing. You can make the custard base specially for this, or use a store-bought one. First you cook the apples down into a purée, then fold it into the custard, and freeze it in a couple of stages. Use apples that are sweet, juicy, and soft — ones that break down quickly are ideal, since they're easier to purée.

- Wash the apples under running water. Peel them, cut into quarters, and cut out the cores and seeds. 2. Put the peeled apples in a heavy-bottomed pot. 3. Sprinkle the apples with sugar. Squeeze the lemon and add the juice straight to the apples, then pour in the water. 4. Set the pot over the heat and cook the apples for 10–15 minutes. All the liquid should cook off and the fruit should turn soft. Stir as you go so the apples don't scorch. 5. Purée the apples with a blender into applesauce. You can also pass them through a sieve — just carefully, so you don't burn yourself. 6. Put the applesauce in a bowl and add the custard. If you made the custard specially for this recipe, let it cool well first. 7. Stir until smooth. Choose a container for the ice cream — a loaf pan or rectangular dish works; just keep the layer no more than about 1 1/4 inches (3 cm) thick. 8. Spread the mixture into the container and smooth the top. Cover with plastic wrap and freeze for two hours. 9. After two hours, take it out — it won't be fully set yet. Stir it with a spatula to give it a light, airy texture. 10. Return it to the freezer for two more hours. Scoop into portions with an ice cream scoop. Garnish to taste — a mint leaf is perfect.
