Halushky with Potatoes
A quick, simple, hearty, and very, very tasty Ukrainian dish! My grandmother used to make halushky (soft dough dumplings) with potatoes, so this dish takes me right back to childhood. It's filling and delicious — great as a side for meat, but good enough to eat on its own.

- Start by peeling the potatoes and cutting them into large cubes. Put a pot of salted water on the stove and add the potatoes to cook. Meanwhile, make the halushky. Melt the butter and pour it into a bowl, add 1/2 cup of water, crack in the eggs, and add salt. Mix thoroughly. Sift the flour, make a well in the mound, and pour in the butter, water, and egg mixture. Knead a dough — it should be soft, not too stiff. Divide the dough into portions and roll each into a rope. After about 10–15 minutes, cut each rope into pieces and drop them into the pot of boiling water. Cook the halushky until done — they're ready when they float. The potatoes should be done by then, too. While the potatoes and halushky cook, peel and slice the onion into half-rings. Fry it in butter until golden and salt to taste. Drain the cooked halushky and potatoes in a colander, then arrange them on plates — work quickly so they don't cool. Top with the fried onion and sprinkle with ground pepper. Add a dollop of sour cream and serve. Enjoy!
