Homemade Goat's Milk Yogurt

A super-healthy treat you can make yourself at home! When I make yogurt this way, it works out to a small jar of delicious, wholesome yogurt for each of us — my husband, my child, and me. I serve it with berries or a fragrant syrup, and sometimes I add jam — strawberry and blueberry are especially good, I think. You can dream up other mix-ins for variety, even savory ones.

    1. Bring the milk to a boil and boil for 1 minute, stirring constantly. 2. Pour the milk into a sterilized glass jar and let it cool to 100–104°F (38–40°C). 3. Add the starter — either a dry culture (the amount called for on the package for this much milk) or plain yogurt. 4. Rinse a thermos with boiling water, then pour in the milk with the starter. 5. Set the thermos in a warm spot or wrap it in a blanket. Leave it for a day. 6. When the time is up, transfer the yogurt to jars and refrigerate for 2 hours, after which it's ready to eat. Enjoy!
