Salmon Ceviche

An exotic Peruvian dish - refreshing and low in calories! Ceviche is made with seafood or fish and comes from Peruvian cuisine. The trick is that the fish goes in raw - it's briefly marinated in lime juice and then served with various vegetables and fruit. Give it a try - it's wonderfully unusual and delicious, and easy on the waistline too!

    1. How do you make salmon ceviche? Cut the salmon into cubes. 2. Cut the avocado, mango, bell pepper, and cucumber into cubes as well. Try to make all the pieces about the same size (around 1/2 inch / 1.5 cm). 3. Peel the shallot and cut it into thin rings. 4. Cut the jalapeno into smaller cubes or thin strips. 5. Squeeze the lime juice and pour it over the cut fish, vegetables, and fruit. 6. Add the sesame seeds, salt, and pepper if you like. 7. Drizzle in the olive oil and gently toss everything with a wooden spatula. 8. Chill the ceviche in the fridge for 20 minutes, then serve in pretty glasses garnished with lime rounds.

  • For this recipe it's best to use fresh fish rather than frozen, or the finished fish may turn out dry.
