A wonderful dough recipe for dumplings originally from Ukraine! In my opinion, these are the most correct dumplings, the most delicious. I recently found out that my favorite dish dumplings came to us from Turkish cuisine. There they were called "dyush-vara". Gradually, it turned into "varaniki".and only now we all know them as dumplings. I like the culinary recipe of Ukrainian dumplings the most.

First you need to knead the dough. It should be very cool. Mix flour with water. You can add milk instead of water. Add eggs, a pinch of salt and a little sugar to them. Roll the dough into a ball and put it in the refrigerator for half an hour. After that, get it out and roll it into a layer. It should be very thin. Cut circles out of it. Their size depends on what kind of stuffing you are going to put in them. If it's potatoes, then the circles should be bigger. For cottage cheese, you can also cut small circles using the sharp edge of the glass. After you have made dumplings, they should be dipped in salted boiling water. Cook them for about 10 minutes. As soon as they pop up, you can pull them out. Pour hot dumplings with butter, which can be easily melted in a water bath. Such food can be eaten with sour cream, if dumplings with potatoes. If dumplings are made with cottage cheese, then we usually eat them with honey or jam. Bon appetit!
