Consider the size of your bread maker. The number of berries should not exceed the middle of the bowl. 500 grams was perfect for my model.

    Wash the currant well, putting it in a colander, under running water. Then leave it for a while in order for the water to drain. It is not necessary to dry the berries, as it will heat up in the bread maker. Then peel the berries from the twigs. You can do it just with your hands. Try using a life hack - to remove berries from twigs with a fork. Very convenient! In one movement, all the berries are removed. Also remove the excess garbage, if there is any.

    Put the currants in a large bowl. Grind it with an immersion blender. You can also use a chopper or a meat grinder. Whether to remove the bones or not is a matter of taste. I cooked with them, they don't interfere with my jam. If this is critical, then wipe the mass through a sieve. Weigh the finished puree.

    Measure out the required amount of sugar. Calculate from the proportion of 2 kg of berries - 1.5 kg of sugar.

    You can pour the jam in hot form into dry clean jars, or you can decompose it cooled down. Such jam is stored in a cool place. Due to the large amount of acid and sugar, it does not spoil.

Remember that spices such as salt, sugar, as well as vinegar and its substitutes are used in recipes for winter preparations not only for taste, but primarily as preservatives. Therefore, in no case should you reduce the concentration of salt and sugar, and also replace vinegar (essence) with a weaker concentration than indicated in the recipe, otherwise vinegar (salt / sugar) will not show their preservative properties and the workpiece will be spoiled.

The first time I cooked jam in a bread maker. I liked it! Fast and hassle-free! The jam turned out to be thick, very beautiful in color. It tastes bright, with sourness, but not cloying, without an edge.
