A hearty, tasty soup ready in 20 minutes! This one's a hit with grown-ups and kids alike. It's no trouble to make and comes together fast. The stars of the show are couscous and bacon.

  • When there's no time to cook dinner but the whole family needs feeding, a good go-to recipe saves the day — and here's one of mine. Couscous soup comes together incredibly fast from a simple list of ingredients, and the bacon makes it rich and satisfying. Couscous is a wheat product that looks like tiny round grains of rice, no more than 1–2 mm across. You can use bacon cut into either cubes or strips. First, prep everything: peel and wash the potatoes, onion, carrot, and garlic. Cut the bacon into even, bite-size pieces. Cut the onion and carrot into small sticks. Dice the potatoes into roughly 1/2-inch (1 cm) cubes. Cook in a deep skillet or a heavy-bottomed pot. Add the oil and heat it, then fry the bacon until done, stirring constantly. Lift the bacon out with a spoon. Add the onion and carrot to the leftover fat and fry over high heat until golden, stirring constantly so it doesn't burn. Add the potatoes and couscous and stir. Pour in the water — or chicken or vegetable broth, for even better flavor! Season with salt and bring to a boil. Reduce to medium, cover, and cook until the potatoes and couscous are tender, no more than 10 minutes. While the soup cooks, cut the tomato into small pieces (you can peel it first by dunking it briefly in boiling water). Press or finely mince the garlic. Chop the herbs — I used green onion and parsley. After 10 minutes, turn the heat to high and add the tomato and garlic, followed by most of the bacon (save a little for serving) and the bay leaf. Stir, taste for salt, and adjust if needed. Let it boil for a few seconds, then add the herbs and take it off the heat. Cover and let it rest a while. Ladle into bowls, top with the reserved bacon, and sprinkle with allspice. Enjoy!
