  • How do you make Lyudmila salad with ham and mushrooms? It's quite easy: 1. Lightly sauté the onion in vegetable oil, let it cool, and mix it with the pickled mushrooms. 2. Cut the ham into small sticks. 3. Cut the fresh cucumber the same way. 4. Finely chop the green onion. 5. Grate the hard-boiled eggs on the large holes of a box grater. 6. In a salad bowl, start with a bottom layer of the grated eggs mixed with mayonnaise. 7. Add a layer of chopped green onion (save a little for garnish) and brush lightly with mayonnaise. 8. The third layer is the mushrooms with sautéed onion. 9. Then add the cucumber and mayonnaise. 10. The final layer is the ham, also spread with mayonnaise. 11. Chill the salad in the refrigerator for an hour, so it firms up a bit. 12. Invert the bowl onto a wide serving platter and tap it lightly. Lift off the bowl and garnish the salad with cranberries and green onion. The salad is ready to serve. Happy celebrating!
  • All cooking oils are good only up to a certain temperature — the smoke point — beyond which the oil starts to burn and form harmful compounds, including carcinogens. It's worth learning how to gauge frying temperature and pick the best oil for the job.
  • It's worth making your own mayonnaise — it tastes better and is better for you. You'll find some great homemade mayonnaise recipes here. You can also dress the salad with sour cream or plain yogurt instead of mayonnaise, on their own or blended with mayonnaise in any ratio you like, to cut down on calories.
