Step 1:
How to make pita bread rolls with red fish and cheese? Prepare the products. Choose the freshest and most delicious pita bread. You can take both purchased and salted fish yourself. It is very convenient to use ready-made slicing, like mine. Any red fish will do — salmon, chum salmon, trout, pink salmon. Take natural cheese, without milk fat substitutes. I have cheese already with the addition of greens.
Step 2:
Take the greens that you love or what is available. Fish goes well with dill, I took it. Wash and dry the greens well. Excess moisture will greatly soak the pita bread. Chop it finely with a sharp knife, after tearing off the rough stems.
Step 3:
Put the cheese in a deep bowl. Wash the lemon thoroughly with soda, as you will need not only the juice, but also its skin. Cut a quarter and squeeze the juice into a bowl with cheese. Be careful that no bones get into it. Then rub a little lemon zest on the smallest grater, trying not to touch the white part — it is very bitter. Pour the chopped herbs into a bowl, add pepper to taste. Mix the mixture well until smooth.
Step 4:
Spread the pita bread on the table and spread it evenly with cheese mass. It is convenient to do this with a flat knife or a spatula.
Step 5:
Arrange the pieces of fish from one long edge to about the middle. If you have a whole piece of fish, then pre-thinly slice it with a sharp knife.
Step 6:
Roll the pita bread into a roll, and then wrap it in plastic wrap. I cut the roll into two parts, as it turned out to be too long. Remove the roll for at least 30 minutes in the refrigerator so that the pita bread is properly soaked and becomes soft.
Step 7:
Then take the roll out of the refrigerator, free it from the film and cut it into mini rolls about 2 cm wide. For convenience, you can prick each roll with skewers. And for beauty — decorate with halves of cherry tomatoes and greens. Serve the appetizer to the table. Bon appetit!
How to choose the right pita bread? First of all, look at the date of manufacture on the package. Do not take expired pastries. Fresh pita bread should have a pleasant smell. Take a good look so that there are no stains and signs of mold on it.
