Achichuk Salad

Juicy, bright, the quickest, simplest, and most delicious! Achichuk salad is a wonderful complement to shish kebab, cutlets, pilaf, and much more. It's made from everyday ingredients — tomatoes, onion, and fresh herbs — and you can put it together in under five minutes, yet it's sure to please everyone at the table!

    How do you make Achichuk salad? Gather all the ingredients you'll need. Choose juicy, firm tomatoes that aren't too fleshy. This time I used 5–6 cocktail tomatoes. They're bigger than cherry tomatoes and smaller than regular ones, with a rich, slightly sweet flavor that made the salad really tasty.

    Rinse the tomatoes under cold running water. Pat them dry with paper towels to remove any remaining drops. Cut each tomato in half and cut out the stem end.

    Cut the tomatoes into not-too-large wedges. If you like, you can slice them very thin. Put the pieces into a deep bowl of suitable size.

    Peel and rinse the onion, and dry off any remaining water with a kitchen towel or paper towel. To make the salad look brighter, I used half a red onion and half a regular one. Slice the onion into thin half-rings and add it to the tomatoes.

    Rinse the basil, dry it, and chop it finely. For the herbs, you can also use parsley, cilantro, or green onion. Add the herbs to everything else.

    Salt everything to taste, season with ground pepper, and toss thoroughly. Let it rest for a minute or two, toss again, and serve.

  • Achichuk salad comes from Uzbek cuisine. It's not dressed with mayonnaise, oil, or yogurt. If you're making Achichuk to go with shish kebab, use a 1:1 ratio of onion to tomatoes. If it's for a rich pilaf, use more tomatoes. Use a chili pepper pod if you like spicy food — slice it into small rings and add it to the bowl in step 5, or use chili flakes and add them to everything in step 6. Enjoy!
  • To keep your eyes from stinging while slicing onions, rinse the onion and the knife with cold water. Your cutting board won't soak up the onion smell if you rub it with a piece of lemon before slicing.
  • Since everyone's tolerance for saltiness, sweetness, bitterness, sharpness, acidity, and heat is different, always add spices and seasonings to your own taste! If you're using a particular seasoning for the first time, keep in mind that some are especially easy to overdo (chili pepper, for example).
  • Choose tomatoes that are juicy but firm. Soft ones don't hold their shape well; as you slice and toss them they'll fall apart into a shapeless mush and spoil the look of the dish.
