- Rinse the porcini mushrooms well, drain them in a colander, and pat dry. Slice the mushrooms lengthwise into thin pieces. Peel and rinse the shallots and garlic. Dice the shallots and finely mince the garlic clove with a knife. Rinse the beef under running water, pat it dry, and cut it into medium pieces. Pour half the olive oil into a deep skillet, heat it, and add the beef. Season with half of the salt. Sear the beef over medium heat for 3–4 minutes, leaving it juicy and slightly pink inside, then transfer the pieces to a plate. Add the remaining olive oil to the same skillet. Add the diced shallots and sauté for about a minute until soft, stirring constantly so they don't burn. Add the porcini and the minced garlic. Cook the mushrooms for 10 minutes, stirring constantly, until the liquid they release has evaporated. Sprinkle the mushrooms with the flour and stir. Pour in the broth (beef broth is best) and bring to a boil over medium heat. Season the mushrooms with the remaining salt and freshly ground black pepper. Reduce the heat to low, cover, and simmer for about 5 minutes. Stir the Dijon mustard and sour cream into the mushrooms, mixing well with the sauce that forms. Return the seared beef to the skillet, stir it together with the porcini and sour-cream sauce, cover, and simmer about 5 minutes so all the flavors meld. The beef with porcini in sour-cream sauce is ready! Transfer it to a plate and garnish with chopped parsley. Serve it over spaghetti or fettuccine. Enjoy!
