Step 1:
How to cook compote from nectarines for the winter? Prepare the products. Take the most ripe nectarines, but not spoiled, carefully select too soft fruits — compote can ferment from them. Wash good strong fruits thoroughly, remove the seeds from them and cut into 2-4 parts.
Step 2:
Rinse the jars very well under running water. For this recipe, it is not necessary to sterilize them, since they will be scalded with boiling water twice. Place the sliced nectarines in jars for 2/3 of the volume.
Step 3:
Bring the required amount of water to a boil separately in a saucepan.
Step 4:
Pour boiling water over the nectarines in jars all the way to the top. Cover the jars with lids and leave to stand for 15 minutes. Pour boiling water very carefully so that the jars do not crack from the temperature drop.
Step 5:
Then drain the water from the jars back into the pan, leaving the nectarines in the jar. To do this, it is convenient to use a special lid with holes. Add the required amount of sugar at the rate of 300 grams per 1 liter of water. Bring the syrup to a boil and boil for 5 minutes.
Step 6:
Pour the syrup into jars with nectarines. Now it is better to pour the syrup level with the neck level so that there is no air left between the lid and the product.
Step 7:
Screw the jars with lids. Pre-cover the lids with boiling water from the inside. Put the cans upside down under the blanket and leave them so until they cool down completely. In this way, you will additionally sterilize the covers and check their tightness. Remove the compote for storage in a cool, dry place. Enjoy your meal!
