  • For a berry liqueur, you'll need ripe black currants. First pick them over, removing any twigs and leaves. There's no need to trim the little stems, since the drink gets strained later anyway. Once sorted, rinse the berries well under cold running water and drain them in a colander. Next, make a sugar syrup: combine the water and sugar (in the amounts the recipe calls for) in a large heatproof pot over low heat, stirring until the sugar fully dissolves. As soon as the syrup is smooth, add the rinsed black currants. Stir and simmer them in the syrup for about 3–4 minutes, then take the pot off the heat. With a wooden masher, lightly crush the berries until they release their juice — or leave them whole. Cool the mixture to room temperature and transfer it all to a glass container, such as a jar. Meanwhile, dilute the spirit to the strength you want with clean, ideally distilled, water; how much you need depends on the spirit's starting proof and how strong you want the liqueur — you can easily find dilution ratios online or in books. Pour the diluted spirit into the jar with the currants and stir. Seal it tightly and keep it in a dark place for 18–20 days, shaking the jar every couple of days for the best result. After that, strain the liqueur through a layer of sterile cotton and cheesecloth to remove the berry pulp. Bottle the finished drink, seal it tightly, and store it in a dark, cool place for up to a year. Enjoy!
