Armenian Arishta

An Armenian main dish! It's easy — give it a go! Traditional Armenian arishta noodles turn up in all sorts of national dishes, from soup to dessert. Today I'm making them as a side dish. You can round out the flavor with any sauce you like. (Arishta is a traditional Armenian hand-cut egg noodle.)

  • To serve arishta as a proper main or side dish, use thick noodles (like spaghetti) — thinner kinds overcook and lose their shape, and are mostly used in traditional desserts. The cooking ratio is much like for regular pasta: about 1 quart of water per 100 g of dry noodles, with salt to taste. Bring the water to a boil, add salt and the arishta. Break the long noodles into roughly 3-inch (7 cm) pieces so they're easy to eat. Stir well with a fork so they don't clump or stick to the bottom. Cook over medium heat for 7 minutes, just shy of done. Drain the noodles in a colander, rinse them with plenty of cold running water, and let them cool right in the colander. While they cool, melt the butter in that same pot, taking care not to let it burn. Stir a little ground pepper into the melted butter. Return the slightly cooled arishta to the pot and toss well with a fork so the melted butter coats every strand. Lower the heat to its minimum, cover, and let it steam for 10 minutes, lifting the lid now and then to check it isn't scorching. If the noodles start sticking to the bottom, add a little more butter. After 10 minutes the noodles are ready to serve. Plate them and, if you like, finish with a traditional Armenian sauce or fresh herbs. Rinse the parsley under running water and pat it dry; pull the tender leaves off the stems and use them to garnish. Serve arishta as a dish on its own with some vegetables, or as a side for meat.
