Uzbek Sweet (Halvaytar)

Make a rare Central Asian sweet right at home — and it's delicious! Uzbek sweets are a wonderful treat, nothing like the usual candies, cookies, cakes, and pastries, yet every bit as tasty. This one is a type of halva called halvaytar. It's easy to make with just a handful of ingredients, and you can swap the lamb tail fat for ghee. The result is surprisingly tasty and filling. Be sure to serve halvaytar with hot tea — as you would any dish made with lamb fat.

  • Gather the ingredients from the list. Of course, lamb tail fat isn't always easy to find, and it does need to be fresh. Traditional recipes sometimes swap it for ghee, so feel free to do the same. Set a saucepan over medium heat. Add the sugar and water and, stirring constantly, heat until the sugar crystals fully dissolve. Take this syrup off the heat. Cut the lamb fat into small pieces. Heat a skillet over medium heat, then add the fat pieces. Stir often and keep them on the heat until the fat renders. As soon as it does, remove the crisp cracklings from the pan. Now add the flour to the melted fat and toast it to a golden-brown, stirring constantly with a wooden spoon — take care not to let it burn, since that makes or breaks the flavor of the finished dish. Once the flour has changed color, it's time to pour in the syrup you made earlier. Stir vigorously. Keep it on the heat, stirring constantly, until the sweet reaches the consistency you want: it can be loose — in which case pour it into bowls — or thick, in which case you cut it into cubes. I suggest making it thick. So, once the mixture has thickened, spread it into a mold, press the walnuts gently into the top, and refrigerate for a couple of hours. When the time is up, take it out and cut the sweet into pieces. Enjoy with your tea!
