Hungarian-Style Vegetable Relish

A vegetable relish for winter that bursts with bright flavor! This Hungarian-style relish is something special — a tomato base loaded with hand-picked vegetables that makes a delicious addition to any main course. You can leave the skins on the tomatoes if you like, but peeling them gives the relish a smoother, more tender texture.

    1. Wash the tomatoes, score a small X in the skin of each, and pour boiling water over them. Transfer to a bowl of cold water and slip off the skins. Dice the flesh — it will break down as it cooks.
    1. Seed and core the bell peppers, wash them, and cut into strips. Peel the carrots and cut into thin matchsticks. Peel the onion and garlic; dice the onion and press the garlic through a garlic press.
    1. Put the tomatoes in a pot with a little water (about half a cup), set over the heat, and bring to a boil. Add the carrots and bell peppers and cook for 5–10 minutes, stirring now and then. Finally, stir in the onion and garlic.
    1. Season the relish with salt and ground black pepper to taste, add the sugar, and pour in the sunflower oil. Cook for about 10 minutes, then add the vinegar, stir, and spoon into sterilized jars. Seal tightly.
  • Wrap the jars in a warm blanket and leave them for a day until fully cooled. Store the jars in a cool cellar or pantry.
