Pelamushi (Georgian Grape Pudding)
A Georgian dessert well worth trying! Pelamushi is a grape pudding from Georgian cuisine, traditionally made for the holidays. You don't have to use two kinds of flour — cornmeal or wheat flour alone will do. If any lumps form as you whisk the flour into the juice, just press the mixture through a sieve. You can adjust the sugar to taste, but remember that it should never be cloying — the traditional flavor has a gentle tartness.

- Pour the grape juice into a saucepan, add the wheat flour and cornmeal, and whisk thoroughly by hand so there are no lumps.
- Stir the sugar and vanilla into the smooth mixture, then set the pan over the heat.
- Cook the pelamushi until it thickens; once it turns glossy and viscous, lower the heat to its minimum and cook another 10–15 minutes.
- Lightly moisten your molds with water, then pour in the mixture.
- Once the dessert has cooled, turn each mold out onto a flat plate and garnish with chopped peanuts.
- Pelamushi is served cold.
