- Cut the bacon into thin strips and put it in a dry skillet (no oil). Cook over medium heat until golden and crisp on both sides, then transfer to a plate to cool completely. Once it's cooled and firmed up, crumble it into small pieces. 2. Peel the onion, rinse it, pat it dry with a paper towel, and finely dice it. In the same skillet you cooked the bacon in, sauté the onion for 3–4 minutes until golden. Set it aside — you'll need it a bit later. 3. Peel, rinse, and cut the potatoes into small pieces. Put them in a small pot and cover with clean water. Add salt and freshly ground black pepper. Bring to a boil, then simmer over low heat until the potatoes are soft enough to mash. 4. Pour the chicken broth into another pot and set it over the heat. 5. Once the potatoes are done, purée them with a blender, add the cheddar (cut into small pieces), and pour in the 1% milk. Over low heat, melt the cheese and stir it together with the potatoes and milk until smooth. You can use any cheese in place of cheddar. 6. Stir the creamy potato mixture into the hot chicken broth and blend everything together until smooth and uniform. 7. Keep cooking the soup over low heat. Taste and adjust the seasoning if needed. As soon as it starts to boil, take the pot off the heat. 8. Ladle the creamy potato soup into bowls. Top with the sautéed onion and crispy bacon bits, add a dollop of sour cream, and sprinkle with fresh herbs. Enjoy!
