Savory Pie with Marinated Mushrooms and Potatoes

This pie with marinated mushrooms and potatoes turns out very soft, and it's great served with fresh or braised vegetables for a satisfying dinner. You can use fresh mushrooms instead of marinated ones, and swap the sour cream for mayonnaise.

  • Pour warm water into a bowl and add the salt, sugar, and olive oil. Sift in the flour, add the instant yeast, and knead a soft dough that doesn't stick to your hands. Cover it with plastic wrap and leave it to rise for 40–60 minutes while you make the filling.
  • Peel and wash the potatoes, boil them until partway done, drain, and let them cool. Drain the marinated mushrooms in a colander to shed the excess liquid. Peel the onion, cut it into strips, and sauté in vegetable oil until translucent. Combine the sautéed onion with the mushrooms, season with salt and pepper, add the dried dill, and mix.
  • Once the dough has risen, divide it in two. Roll out one half and fit it into a baking dish about 10 inches (26 cm) across. Slice the potatoes thinly and spread them in an even layer over the base, brush with sour cream, and season lightly with salt and pepper. Spread the onion-mushroom layer over the potatoes. Roll out the remaining dough, lay it over the filling, and pinch the edges to seal. Cut a small vent in the center and brush the surface with egg yolk. Bake in an oven preheated to 400°F (200°C) for 40 minutes.
  • Serve the pie warm. Enjoy!
