  • Even the simplest pea soup can be dressed up with little touches for a special, distinctive flavor. That might be garam masala with grated ginger for an Indian spin, or a heartier mushroom version with noodles. Pea soup with cheese has a pleasant creamy taste, and with smoked processed cheese there's a gentle smokiness too. To play up that smoky aroma, add a bit of smoked suluguni. Depending on the cheese, it may melt away completely into the soup, partly, or stay in distinct pieces. Start with the base of a standard pea soup by cooking the peas down: cover the peas with boiling water, add a bay leaf and a little salt. A pinch of ground cinnamon and a splash of oil help keep the foam down. Once the peas come to a boil, skim off the foam and simmer over low heat until they break down completely. Shortly before the end, add the carrot, peeled and grated on the coarse side of a grater, plus spices to taste. If you like, round out the soup with potatoes and sautéed onion. At the very end, add the soft cheese (processed or sausage cheese), cut into small thin slices (or grate it on the coarse side of a grater). Simmer for three or four minutes. Stir and serve right away in warm bowls, garnished with fresh herbs. As it sits, the soup thickens and becomes more gel-like. Serve it with a dollop of sour cream and croutons or crunchy bread crisps.
