Herring oil is prepared in a meat grinder, alternating, we pass through it pieces of boiled carrots, herring fillets peeled from bones, butter and processed cheeses. The cheeses must be firm, otherwise they will be smeared in a meat grinder, and the butter will be well cooled. The resulting mass is mixed well and put in the refrigerator so that the oil cools down a little. I like to eat herring butter, both with black and white bread, garnishing them with greens. But the taste of "red caviar" is more pronounced if you make sandwiches with white bread or a loaf.
