  • How do you make a chicken, pineapple, corn, and rice salad? Start by boiling the chicken breast for about 30 minutes. You can save the leftover broth for a soup later, but you won't need it here. Cool the chicken in the broth, then cut it up — I like to cut it into large cubes. Put the rice on to cook; choose a variety that stays fluffy and separate. Next, open the canned pineapple and corn. Drain them and cut the pineapple into pieces. And, of course, a fresh cucumber. One tip: if you're serving this for a party, cut the cucumber right before serving, or it'll release its juice. Mix the mayonnaise with the sour cream and dress the salad. Garnish with fresh herbs.
