Cooking method
- How do you make a chicken, pineapple, corn, and rice salad? Start by boiling the chicken breast for about 30 minutes. You can save the leftover broth for a soup later, but you won't need it here. Cool the chicken in the broth, then cut it up — I like to cut it into large cubes. Put the rice on to cook; choose a variety that stays fluffy and separate. Next, open the canned pineapple and corn. Drain them and cut the pineapple into pieces. And, of course, a fresh cucumber. One tip: if you're serving this for a party, cut the cucumber right before serving, or it'll release its juice. Mix the mayonnaise with the sour cream and dress the salad. Garnish with fresh herbs.

- It's best to make the mayonnaise yourself — it'll be tastier and better for you; look for good homemade mayonnaise recipes. You can also use sour cream or plain yogurt as the dressing instead of mayonnaise, on their own or mixed with mayo in any ratio you like, which lightens the dish.
- If the cucumber peel isn't tough, damaged, or bitter, there's no need to remove it.
