Layered Beef and Apple Salad

A hearty salad of boiled beef and apples with egg and cheese. Boil and cool the beef ahead of time — it needs about two hours of cooking. I used bone-in beef, which is a great value: you get broth for borscht and meat for the salad. The apples should be firm and mild — not too sweet, not too tart, without a strong flavor or aroma. A Lobo-type apple works well here. The salad comes out delicious.
