Achik Chuchuk Salad

  • A salad of just a few ingredients — simple, quick to make, yet surprisingly tasty. It doesn't need any oil or sauce for dressing; its dressing is the tomato juice, of which there's plenty. Achik Chuchuk is served with pilaf for good reason: the salad improves digestion and helps you handle rich food. Pilaf served with this salad takes on whole new layers of flavor. There are many ways to make it — sometimes thinly sliced cucumbers or hot chili pepper are added, sometimes spices and fresh herbs like cilantro or basil. But often the salad has only tomatoes and onion, seasoned with salt. A little black pepper doesn't hurt either, especially if it's freshly ground. Choose ripe, juicy tomatoes for this Uzbek salad — the tastier the tomatoes, the tastier the salad, of course. You can use a regular onion or swap in a red one. It's best to make Achik Chuchuk right before the pilaf is done — about 15–20 minutes ahead. So: wash the tomatoes under running water and pat them dry with a towel. Peel the onion. Cut the tomatoes into thin slices and the onion into quartered rings. If you have a few small onions, cut them into half-rings. One important point — cut the onion and tomatoes right over the salad bowl, since the juice is the most important part of this salad. And another thing worth noting: slice both the tomatoes and onion as thinly as possible. Next, salt the salad, sprinkle with freshly ground black pepper, and toss gently. Let it sit for 10–15 minutes, then serve — with fragrant hot pilaf, of course!
