Pasta Nests in a Slow Cooker

Make an unusually delicious dinner for the family! These pasta nests come together right in the slow cooker. The cooking time isn't any shorter, but the results are well worth it. Stuffed nests cook in 20 to 25 minutes — yes, the package calls for much less, but keep in mind that here the pasta starts out in cold water, which stretches the time a bit. Small mozzarella balls are especially handy for this recipe.

  • You can use store-bought ground meat, but it's even better to grind your own: rinse a piece of meat, cut it into chunks, and run it through a meat grinder. And it doesn't have to be turkey — pork, beef, or chicken all work here. If kids will be eating it, leaner meat is the way to go. 1. Peel the onion and cut it into a fine dice. 2. Pour the vegetable oil into the slow-cooker bowl and select the "Sauté" (Frying) setting. 3. Add the onion to the hot oil and cook, stirring, until soft. 4. Add the ground turkey to the onion and keep cooking, stirring and breaking up any clumps with a wooden spoon. 5. Season the meat and onion with salt and pepper and stir. Cook the meat and onion for about 20 minutes total. 6. Transfer the cooked mixture to a bowl and let it cool slightly. 7. Meanwhile, arrange the pasta nests in the slow-cooker bowl. 8. Tuck one ball of mozzarella into each nest, then top with the meat — about two tablespoons per nest, mounded up above the rim. 9. Now pour water into the bowl so it covers the pasta but leaves the meat uncovered. 10. Add the bay leaf and salt the water. Select the "Cook" (boil/steam) setting and set the time for 20 minutes. 11. When the time is up, carefully lift out the finished nests and arrange them on a platter. 12. Grate the Parmesan over the nests and, if you like, garnish with cherry tomato halves. Enjoy!
