  • Gather the ingredients: salted herring, carrot, processed cheese, butter. Wash the carrot and boil it in its skin until just done — it shouldn't fall apart or turn to mush. This matters, because the carrot is what gives the spread its grainy texture, which in turn makes it taste like real caviar. Clean the herring: skin it, gut it if it isn't already, and remove the bones. If the herring has roe, you can add that to the mix. Run the herring flesh through a meat grinder, ideally twice. A blender won't work here — the spread should be coarse and grainy, and a blender would turn it into a smooth purée, which you don't want. After the herring, run the butter and processed cheese through the grinder. Use a plain processed cheese — either by weight or in individual portions — with a neutral flavor and no added flavorings, so it doesn't overpower the main ingredients. Chill the butter and cheese in the freezer first so they don't smear on the grinder's walls but come out cleanly into the bowl with the herring. Lastly, run the carrot through the grinder, which also clears out any leftover cheese and butter. Stir everything together well in the bowl; you can add salt to taste, though usually there's no need — the salted herring and cheese have enough. Cover the spread and chill it in the fridge for half an hour. The appetizer is ready. Serve it on its own or as a sandwich spread. Fresh herbs are a great addition, and any bread works — rye, white, or a baguette. Enjoy!
