My mother is forbidden to drink strong black tea and coffee for medical reasons. There's nothing you can do, you can't argue with the doctors. When we asked which drink to prefer, the doctor shrugged his shoulders, thought about it and said: "Drink compotes."
Cherry compotes have the most pronounced color and taste, but a more delicate taste is obtained from felt (Chinese) cherry compote. The felt cherry tree is small, and gives the harvest to a person early. Chinese cherry berries are a great food for children with a poor appetite. And the recipe for Chinese compote is an excellent purchase for housewives.
Compote will be closed in glass jars and sealed hermetically, and therefore washed cans and metal lids are subjected to heat treatment.
Cherry berries are sorted, get rid of rotten and spoiled, washed with water, dried on a cloth. Fill the jars with cherries exactly as much as you like. Berry lovers will fill cans up to their shoulders, those who like to drink compote or with a small supply of raw materials – less than half.
We will prepare syrup from sugar and water. Boil both ingredients and pour the cherry syrup in jars 1-2 fingers below the neck. To eliminate moldy, we sterilize the jars with compote. In a large saucepan, we put several liter cans so that they do not touch and set the timer for 20 minutes. If the cans are 0.5 liters, then 10 minutes is enough, more than 1 liter – 40 minutes.
We close the finished compote with lids for preservation and turn it over.
Winter will be thrifty.
