  • For medical reasons, my mother isn't allowed to drink strong black tea or coffee. Nothing to be done — you can't argue with the doctors. When we asked what she should drink instead, the doctor shrugged, thought for a moment, and said: "Drink compotes." Cherry compotes have the boldest color and flavor, but Nanking (felt) cherry makes a more delicate-tasting one. The Nanking cherry tree is small and bears fruit early. Its berries are a great food for kids with poor appetites, and this compote recipe is a wonderful addition to any cook's repertoire. We'll seal the compote in glass jars airtight, so the washed jars and metal lids need to be heat-treated. Sort through the cherries, discarding any rotten or spoiled ones, rinse them with water, and dry them on a cloth. Fill the jars with cherries to whatever level you like — berry lovers can fill them up to the shoulders; those who prefer more liquid (or have fewer cherries) can use less than half. Make a syrup from the sugar and water: bring both to a boil and pour it over the cherries in the jars, to about 1–2 finger-widths below the rim. To prevent mold, sterilize the filled jars. Set several quart jars in a large pot so they don't touch, and set a timer for 20 minutes. For pint (0.5-liter) jars, 10 minutes is enough; for jars over a quart, 40 minutes. Seal the finished compote with canning lids and turn the jars upside down. You'll be well stocked for winter.
