Sprat-Stuffed Eggs (New Year's Appetizer)

A fun, very tasty appetizer of eggs and sprats! Sprat-stuffed eggs make an original appetizer for the family table or a holiday spread. The eggs must be cooked through — hard-boiled. Add mayonnaise to the filling to taste; it holds the mixture together so it doesn't crumble. You can top each one with a whole little fish for an even prettier presentation. Serve these stuffed eggs right alongside your main dishes.

    1. Boil the eggs in boiling water for 10 minutes. Cover with cold water and let cool, then peel. 2. Cut the eggs in half lengthwise. 3. Scoop out the yolks and mash them with a fork. 4. Finely chop the sprats, add them to the yolks, and mix until smooth. 5. Add mayonnaise, salt, and pepper to taste, and stir well. 6. Fill the egg halves with the mixture. Garnish with whole sprats, a little mayonnaise, and finely chopped green onion. The appetizer is ready to serve. Enjoy!
