Ukrainian-Style Vegetable Salad for Winter
A simple, tasty vegetable salad in a sweet-and-sour marinade. This Ukrainian-style salad is a great preserve to put up for the winter, made from the fall vegetable harvest with spices and a sweet-and-sour marinade. It comes out bright and festive — a colorful accent on any holiday table. Serve it as a relish with meat or poultry; it also goes beautifully with fluffy boiled potatoes. It's fine for meatless days and travels well for a picnic or trip to the country.

Step 1:
Gather the ingredients for the Ukrainian-style salad: ripe but firm tomatoes, carrots, bell peppers, onions, and spices — cloves, peppercorns, and bay leaves. The salad is dressed with sunflower oil, vinegar, salt, and sugar.

Cut the vegetables into strips or sticks, not too fine — keep in mind the salad will be cooked, and vegetables that don't break down into mush always look and taste better.

Cut the tomatoes into large wedges.

Put the prepared vegetables in a pot and add the salt, sugar, bay leaves, black peppercorns, allspice, and whole cloves. Add the sunflower oil and table vinegar. Set over medium heat and cook for 5 minutes from the time it boils. Meanwhile, prepare the jars and lids: sterilize the jars in the microwave with a little water at full power for 3 minutes (or boil them as usual), and pour boiling water over the lids.

Pack the hot salad into the prepared jars, filling them about halfway with the juices.

Microwave the jars at a rate of 7 minutes per three pint (half-liter) jars. This amount of ingredients makes about 5 quart jars (or 9–10 pint jars). Or sterilize them the usual way, in a water bath.

Seal the jars with sterile lids and set them "under a blanket" until completely cool.

That's it — your Ukrainian-style salad is ready! Store it in a cool place until you need it. It makes a great relish for meat dishes or boiled or fried potatoes. Enjoy!
