Apple and cranberry pie

Delicious dessert with a spicy taste and berry aroma! Apple pie with wild berries is a homemade pastry that will look appropriate on the table at any time of the year. Cranberries can be used frozen. A pleasant addition to such a pie will be fragrant freshly brewed tea.

Cooking method

Mix flour with baking powder and salt. Finely chop margarine with a sharp knife and mix with flour. Mix all the ingredients together directly with your hands to make a flour crumb.

Pour apple cider vinegar and 2/3 of water into the resulting crumb. The water should be very cold, directly icy. Mix the crumbs with the liquid ingredients, gradually adding the remaining water. Knead a soft and elastic dough that will not stick to your hands. You may need a little more or a little less water, depending on the type of flour and the presence of gluten in it.

Divide the resulting dough into two equal parts. Wrap both parts in plastic wrap so that they do not dry out, and put them in the freezer for a couple of hours. You can prepare the dough in advance the day before. After the dough has hardened, remove it from the freezer and defrost it until soft.

Roll out one of the dough pieces using a rolling pin into a thin sheet and put it in a baking dish. If the shape is round, then roll a circle out of the sheet and bend the sides.

Beat the egg whites with a culinary whisk and grease 2/3 of it with the bottom cake of the pie. Put the cake back in the freezer.

Turn on the oven at 180 degrees Celsius in convection mode or heating from above and below.

To fill the pie, melt the butter in a fireproof dish, add flour and mix until smooth. Then pour in water and pour in white and brown sugar, nutmeg, cinnamon and ground cloves. Mix all the products and put on medium heat. Bring everything to a boil, stirring constantly so that there are no lumps.

Wash and dry apples and cranberries. Cut the apples into pieces, remove the core and rough skin. Pour the chopped fruits and berries into a container to the prepared mixture and mix well.

Remove the mold with the bottom cake from the freezer and evenly distribute the prepared filling on it. Roll out the second part of the dough into a sheet and cut into strips. Cover the top of the pie with these strips, covering it crosswise, making a kind of lattice.

Grease the pie with the remains of whipped protein and sprinkle with sugar.

Put the pie to bake for an hour or until it is covered with a golden crust.
