- Choose ripe, juicy cherries with no rotten spots—the better the fruit, the better the jam. Rinse the cherries thoroughly under running water and dry them in a large sieve or colander. Then pit the cherries; a cherry pitter makes this quick and easy, but you can also remove the pits by hand. Cover the gelatin with room-temperature drinking water and let it sit until it swells. Put the prepared cherries in a pot and cover with sugar. A wide pot or enameled basin is best for cooking jam—the liquid evaporates faster, so the jam comes out thicker and more uniform. Set the pot of cherries over low heat and cook until the sugar fully dissolves. Warm the swollen gelatin over low heat, stirring constantly—never let it boil! As soon as the gelatin liquid is smooth, pour it into the pot of jam. Stir everything together right away, before the jam sets. Once it's fully combined, take the pot off the heat. Get glass jars ready for sealing: wash them well with detergent or baking soda and sterilize them over steam or in the microwave, and boil the lids separately. It's best to seal this jam right away, before it firms up into a jelly. Store it in the fridge or another dark, cool place. It keeps for quite a while—though it usually disappears fast, because it's so tasty :) Happy preserving!
