Talkysh Kaleve (Tatar Honey Candy)

    1. In a saucepan over low heat, melt the ghee. 2. Add the flour to the ghee a little at a time, stirring, and cook for half an hour. 3. Combine the water, sugar, and honey, set over medium heat, and cook until thickened into a syrup. 4. Grease a large glass dish with butter and pour in the honey syrup. 5. Work the mass — first with a knife, then with your hands as it cools — stretching and folding it repeatedly. It should turn into a white, glossy mass. 6. Spread the flour-and-ghee mixture from step 2 on your work surface and lay the honey mass on top. Stretch it out and fold it in half over and over, then pack the resulting strands into molds. 7. Chill the candy in a cold place for an hour. 8. Pop the treats out of the molds and dig in! :)
