Step 1:
How to cook pumpkin jam with dried apricots? Prepare all the products. Take any kind of pumpkin, but still give preference to sweet varieties of this vegetable. Dried apricots need juicy and meaty. Since dried apricots are dried apricots, it is a stretch to take fresh apricots. My sugar is ordinary white, but it is quite possible to use coconut or cane sugar. They will give the finished jam, respectively, a coconut and caramel flavor.
Step 2:
Wash the pumpkin, remove the skin and seeds. Cut the pulp into cubes of approximately 1 by 1 cm .
Step 3:
In a bowl with a thick bottom - such utensils are ideal for cooking jam, put the sliced pumpkin, add sugar and leave for a few hours to extract juice. You can leave it overnight, but in any case, do not expect a large release of juice, because pumpkin in most cases is not a very juicy vegetable and water will still have to be added.
Step 4:
Wash dried apricots. If you have very tough dried apricots, then you can soak it in boiling water for 10 minutes. Cut the dried apricots quite finely, into pieces of 5 by 5 mm.
Step 5:
Add dried apricots to the pumpkin.
Step 6:
Mix everything together. At this stage, lovers of fragrant jam can add some spices to the dishes: a vanilla pod, a stick of cloves, several buds of cloves, a star of star anise - just do not forget to remove the whole spices at the end of cooking. You can add the same seasonings in dried crushed form - a pinch of each will be enough.
Step 7:
Pour in the water, put the jam on a small fire, bring to a boil, and cook over low heat, stirring occasionally, for about 45 minutes.
Step 8:
Remove the jam from the heat and let it stand for 30 minutes or more - you can even let it stand.
Step 9:
Sterilize the jars in any convenient way. I put jars with a small amount of water in the microwave for 5-7 minutes. But you can sterilize them in the oven at 100 degrees for about 30 minutes or hold them over steam. It is enough to boil the lids for 5 minutes. Arrange the jam in jars and close the lids tightly or roll up.

For cooking, it is better to use filtered or bottled water that is neutral to taste. If you use tap water, keep in mind that it can give the dish an unpleasant characteristic taste.
