Emerald Salad with Kiwi and Beef

How do you make Emerald Salad? Hard-boil five eggs, then let them cool and separate the whites from the yolks.

Grate the egg whites on the fine side of a box grater into one bowl.

Cut 350 grams (about 12 oz) of boiled beef into pieces, then chop it into small dice.

Peel two apples and cut them into small dice as well.

Peel seven kiwis, remove the cores, and cut five of them into small dice.

Make the dressing: put 180 grams (about 3/4 cup) of mayonnaise in a deep bowl.

Press two cloves of garlic into the bowl.

Pipe another lattice of dressing over the carrots.

Spread the small-diced apples into the mold as the next layer.

Over the apples, spread and level a layer of the grated egg yolks, pressing it down gently.

Cut the two remaining kiwis into larger dice and arrange them as the final top layer.

Shell and chop 70 grams (about 1/2 cup) of pistachios and scatter them over the top of the salad.
