- First, wash the berries and fruit. For the right proportions, weigh the gooseberries. Transfer them to a suitable pot and cover them with the sugar. Give it a gentle shake so the sugar mixes through, then pour in the water. Set it over the heat and wait for the jam to come to a boil. To save time, cut the citrus—both the lemon and the orange—into small cubes (about a quarter inch each). Don't forget to pick out the seeds; I was lucky—there were none in the orange, and just one in the lemon! Now add the citrus to the berries and cook for another hour over low heat. After that, let the jam rest overnight. By morning it will have a lovely raspberry-red color—the orange is what does it, in my opinion, since at first the jam was green. Now wash and sterilize your jars. Take the jam off the heat and seal it into the jars. Enjoy!
