Step 1:
Prepare the ingredients for the jam. The simplest and fastest jam recipe, the so-called "five-minute", allows you to save the maximum of useful substances in the berry due to the fact that the jam is cooked, literally, only 5 minutes. The berries of the black-fruited mountain ash are sorted, washed, and the rotten and spoiled berries are removed.
Step 2:
We throw the chokeberry into a colander, let the water drain completely. The berries are harvested in autumn between September and November. It's good when the berries are from your plot, grown in ecologically clean areas. Chokeberry should be well ripe, otherwise the product from it will turn out to be bitter and tart. You can make jam not only from only harvested berries, but also from frozen chokeberry.
Step 3:
Put the berries of the chokeberry in a metal saucepan or cup, pour boiling water so that all the berries are under water and blanch over medium heat until soft. A few minutes is enough, depending, of course, on the variety, the degree of ripeness and the size of the berry. Therefore, it is better to taste the berries. Then drain the water, throw the berries into a colander.
Step 4:
Again we put the rowan in a metal dish, which will not oxidize when interacting with berry juice, it is better to take a thick-walled saucepan for cooking jam. Pour sugar into a saucepan with berries and grind them together with a hand push or a blender. In the absence of such devices, you can use a meat grinder. The degree of grinding depends on the consistency of the jam you want to get, as a puree or with pieces of berries.
Step 5:
We put a mixture of chokeberry with sugar on the fire. Bring to a boil and boil over medium heat, stirring constantly so that the sugar does not stick to the bottom and completely dissolves, five minutes from the moment the mixture boils.
Step 6:
Immediately lay out the jam in pre-prepared and sterilized jars. We roll up the lids and put them away for storage in a cool place.
