Yin-Yang Salad with Prunes

A delicious, delicate salad with an eye-catching design. In Chinese philosophy, yin and yang represent opposites—man and woman, hard and soft, dark and light. This Yin-Yang salad isn't an Asian dish; it gets its name from the way it's decorated with that ancient symbol. There are several versions of this salad, and I'll show you the most popular one.

  1. Step 1:

    The ingredients. Boil the eggs and chicken breast ahead of time. Instead of boiling the chicken, you can also bake it in the oven wrapped in foil.

    Pour boiling water over the prunes.

    The salad has 5 layers. Finely chop the chicken breast.

    Layer 1: the chicken breast, brushed with mayonnaise.

    Cut the fresh cucumber into cubes.

    Layer 2: the cucumber, brushed with mayonnaise.

    Separate the boiled eggs into whites and yolks.

    Mash the yolks with a fork, or grate them on the fine side of a box grater.

    Layer 3: the yolks, brushed with mayonnaise.

    Layer 4: the hard cheese, grated on the fine grater, brushed with mayonnaise.

    Using the tip of a fork or a toothpick, sketch the yin-yang design onto the salad. Draw a wavy line down the middle and mark out two circles with small glasses.

    Drain the water off the prunes and chop them as finely as possible.

    Layer 5: lay out the design. Start with the dots—one of chopped prunes, the other of egg white grated on the fine grater.

    Fill in the area around the white dot with prunes.

    Let the salad rest for a couple of hours so the flavors meld. Enjoy!
